However, Gulf oysters have taken the lead in developing new technologies to ensure safer alternatives to traditional raw oysters for those who are at risk consumers (people with liver problem, iron overload problem, diabetes, cancer, stomach disorder, or any medical conditions that weaken the immune system). The process called Post-Harvest allow the oyster to be consumed raw but with added safety features. So those consumers that are at risk can now consumed it raw.
Right now the processes currently exist on a commercial scale: individual quick-freezing, low heat pasteurization or heat-cool pasteurization, and high-hydrostatic pressure.
Now that we know its much safer to consume oyster raw, go ahead and eat those yummy oysters.
